Pork Chops with
Goat Cheese Butter
This super simple, delectable recipe can be made with just three ingredients in under 30 minutes!
Ingredients:

Boneless Pork Chops of cut and thickness of your preference (1 for each person)

Goat Cheese Crumbles (~1/4 oz. per person)

Butter of your choice (1-2T per person - I prefer Brummel and Brown Yogurt Butter)

Parsley (optional)
Cook Time: ~20 minutes
Place skillet with nothing in it on stove over high heat. Skillet will need a lid and will need to be large enough to accommodate all of your pork chops.

When skillet is warm (you can feel heat coming off of the pan when you hover your hand over the pan), coat pan with nonstick cooking spray and drop in all of your pork chops.

Sear the pork chops on both sides for approximately 30 seconds or until golden brown. Place lid on pan and turn heat down to medium low.

Cook for 15 minutes or until cooked through. Do not remove the lid while cooking, you want to keep the heat trapped in the pan. (For thicker pork chops you will likely need to increase cook time to 20-25 minutes or decrease to10-15 minutes for very thin chops.)

While pork chops are cooking, put butter and goat cheese crumbles in a bowl and whip. We like a lot of butter on ours so I generally do 2T of butter and .25 oz of goat cheese per person but you can adjust according to your preferences. I use Brummel and Brown Yogurt Butter because it's slightly healthier than normal butter and a lot creamier. I also prefer to use an electric hand mixer to get it really whipped and creamy.

Once cooked through, remove pork chops from pan. Put desired amount of butter on top of pork chops. Optional: sprinkle parsley over pork chop. Serve and enjoy!
